According to the Walser traditions, cows and young cattle are "summered" on the 47 cultivated Alps in the Großes Walsertal.
During the summer months - from June to the beginning of September - the farming families with their livestock move from their home or 'Maisäß' in the valley up to the Alps. During this time, wonderful alpine cheese and delicious alpine butter are produced on 22 Sennalpen.

Here in Großes Walsertal, cheese production has a long tradition. Once every farm processed its own milk into butter, low-fat cheese and simple sour cheese.
Only with the founding of dairy cooperatives in the 19th century, the much more demanding 'Fettkäserei' acquired its present status. Here, only hay milk is processed according to the rules of the art to a spicy mountain cheese: the Walserstolz
